The supermarket where we do our major weekly shop has stopped stocking my husband’s breakfast cereal so we decided to make our own! A quick email to my Mother in Law and minutes later we had the fabulous muesli recipe that he was brought up on. I have to say that it’s delicious and we’re getting ready to make another batch this weekend.

Mix together in a bowl:

6 cups rolled oats

2 cups wheat germ

½ (half) cup of coconut

 In a saucepan heat the following:

1 cup brown sugar

½ (half) cup honey

Half cup of oil

1 tsp vanilla

Half teaspoon mixed spice

Half teaspoon cinnamon

 Once the above have dissolved add to the dry ingredients

Spread mixture onto a roasting pan and bake at 300F for around 30 minutes or until evenly browned stirring every 10 minutes. Once cool, add dried fruit – we used apricots and raisins – and put into an airtight jar.

    Oh yeah! I started making mine a couple of years ago, couldn’t get over the difference in taste between bought and home made. Seriously yummy.

    Sounds great – especially with no preservatives and low-fat. Store bought could never been this good.

    Will give it a try when back from Africa – leave next Wed. Excited and a wee bit nervous!
